How to Make Moin Moin 🍴


Ingredients:

- 1 cup dried beans (black-eyed peas or brown beans) 

- 1 onion, chopped 🍠

- 2 cloves garlic, minced πŸ’‘

- 1 Scotch bonnet pepper, chopped (optional) πŸ”₯

- 1 teaspoon salt πŸ’Έ

- 1/2 teaspoon black pepper ❗️

- 2 tablespoons vegetable oil πŸ’§

- 2 cups water πŸ’§

- 2 tablespoons tomato paste (optional) πŸ…

- Fresh parsley or cilantro for garnish (optional) 🌿


Instructions:

1. Soak the beans: Rinse the dried beans and soak them in water for at least 8 hours or overnight πŸ•°️. Drain and rinse the beans again.

2. Blend the beans:Blend the soaked beans with 2 cups of water until smooth πŸŒͺ️.

3. SautΓ© the onion and garlic: Heat 1 tablespoon of oil in a pan over medium heat πŸ”ͺ. Add the chopped onion and cook until softened. Add the minced garlic and cook for another minute.

4. Add the blended beans:Add the blended beans to the pan with the onion and garlic mixture. Stir well πŸ”„.

5. Add seasonings and spices:Add salt, black pepper, and chopped Scotch bonnet pepper (if using) to the bean mixture. Stir well 🌢️.

6. Add tomato paste (optional):If using tomato paste, add it to the bean mixture and stir well πŸ….

7. Pour into molds: Pour the bean mixture into molds or ramekins 🍰. Cover with aluminum foil or plastic wrap.

8. Steam the moin moin: Place the molds in a large pot or steamer basket 🍲. Add enough water to the pot to come halfway up the sides of the molds. Cover the pot and steam the moin moin for 45-60 minutes, or until firm and set ⏰.

9. Serve:Remove the moin moin from the molds and serve hot or cold 🍴. Garnish with fresh parsley or cilantro (if desired) 🌿.
