TO PREPARE EWA AGOYIN
Ewa Agoyin is a popular Nigerian dish, especially among the Yoruba people! π΄π It's a delicious and flavorful bean stew made with mashed beans, onions, peppers, and spices. Here's a simple recipe to make Ewa Agoyin:
Ingredients:
- 1 cup dried brown beans (ewa) π½
- 1 large onion, chopped π
- 2 large bell peppers, chopped πΆ️
- 2 Scotch bonnet peppers, chopped (optional) π₯
- 2 cloves garlic, minced π‘
- 1 teaspoon grated ginger πΏ
- 1 tablespoon ground cumin ❀️
- 1 teaspoon ground coriander ❀️
- Salt and black pepper, to taste ❗️
- 2 tablespoons vegetable oil π§
- 2 tablespoons tomato paste π
- 2 cups water π§
Instructions:
1️⃣ Rinse the dried beans and soak them in water overnight. Drain and boil until tender. π
2️⃣ Mash the cooked beans using a masher or a blender. π₯
3️⃣ Heat oil in a large pot over medium heat. Add the chopped onion, bell peppers, Scotch bonnet peppers (if using), garlic, and ginger. SautΓ© until the vegetables are softened. π²
4️⃣ Add the cumin, coriander, salt, and black pepper. Stir well. ❀️
5️⃣ Add the mashed beans, tomato paste, and water to the pot. Stir well to combine. π²
